Taco Salad Bowls

Last week I fixed these Taco Salad Bowls and they turned out to be yummy. Messy to eat, but yummy, none the less. Although my version didn't turn out to "look" quite as pretty as in the Kraft Food & Family magazine. :)

Taco Salad Bowls

4 four tortillas (6-8 inch)
1 tbsp. chili powder
3/4 lb. ground beef
1 cup match-like carrot sticks
1/2 cup taco sauce
2 tbsp. mayonnaise
4 cups torn lettuce
1 large tomato
1/2 cup shredded cheddar cheese

Preheat oven to 425 degrees. Crumple 4 large sheets of foil to make four 3 inch balls; place on baking sheet. Place 1 tortilla on top of each ball; spray with cooking spray. Sprinkle evenly with chili powder. Bake 6 to 8 minutes or until tortillas are golden brown. They will drape over balls as they bake giving them the bowl shape.

Brown meat with carrots and 2 1/2 tbsp. chili powder. Add 1/2 cup taco sauce and cook until heated through.

Mix mayo and 2 tbsp. taco sauce in large bowl. Add lettuce and tomatoes. Toss to coat. Spoon into tortilla shellls; top with meat mixture and then cheese.
