I made this for a funeral dinner at church last week and because it sounded so good, I made another batch for us to eat here at home. It really is more of a dessert than a salad, but it is yummy!!
Whipped Apple Salad
Ingredients:
2 eggs
1 can pineapple tidbits and juice
1/2 cup sugar
1 1/2 TBSP cornstarch
3/4 cup cool whip
2 cups chopped apples
2 cups miniature marshmallows
3/4 cup chopped nuts
Directions:
Beat eggs; add pineapple and sugar mixed with the cornstarch. Cook mixture until thick; should resemble pudding thickness. Completely cook and add remaining ingredients. Mix well and refrigerate until serving time. Can also slightly freeze for a very cool salad.
