Coconut Cream Pie

Last Friday I was so excited! I haven't baked a coconut cream pie before, actually not any kind of cream pie. Why? We usually bake fruit pies because Dad tends to like fruit pies over cream pies. They are probably more healthy anyway! :)

Coconut cream pie is one of my favorites, so I decided to try one last week. I knew if I got into trouble, I could always call Grandma (the BEST pie maker!!) and ask her for help! It wasn't difficult, but as I was mixing the milk and egg yolks, I began to wonder if this mixture was actually going to thicken and create the yummy pie I was anticipating!

It did!! I followed the recipe to the letter and finished with a yummy pie! Next time I will use a couple more egg whites for the meringue topping to make it a little taller, but it still tasted good! And I didn't even have to call Grandma! :)
